Dip'A'Day

The other night we made some fantastic raw "calamari" with tartar sauce. The tartar sauce is also great for dipping. For lunch two days in a row now, I have been going crazy with the dipping. Cucumber, bell pepper, carrot, celery, avocado, tomato and zucchini. You can dip anything and it tastes fabulous! Instead of craving a bag of chips while watching movies I've decided to crave for veggies and dip instead.

Butter on my bread

Enjoying home-made honey and oat (not raw) bread with some raw bellpepper-tomato butter. Tastes ten times better than normal butter and is loaded with Omega 3.
What more can you ask for?

Fantastic Chili

The past week we have made a couple of fabulous recipes. This chili was our first 5-star recipe. There will be no picture to this recipe, because I do not think chili, in any form, looks all that appetizing. But believe me, this one tasted just like any other good chili out there. And with a dollop of the dreamy sour cream, it was faaaantastic.

Unbelievable Chili

1 1/2 C. sundried tomatoes
3 C. chopped avocados
1 1/2 C. raw almonds
2 ripe tomatoes
1/2 C. chopped carrots
1/2 C. fresh parsley
1/2 C. freshly squeezed lemon juice
1 tbs chili powder
1/2 jalapeno
1 tbs cumin
1 tsp Himalayan salt
a dash of black pepper

Soak sundried tomatoes for 15 minutes. Put tomatoes (with water) in food processor. Add the rest of the ingredients. Pulse until ingredients are chopped and mixed. Texture should be chili-texture: thick and chunky!

Serve with Dreamy Sour Cream

Dreamy Sour Cream
1 C. soaked raw sunflower seeds
3/4 C. plus 1 tbs water
1/2 C. peeled zucchini
1/4 sweet onion
1/4 C celery
1/2 lemon
2 small garlic cloves
a dash of Himalayan salt

Process sunflower seeds and water until creamy. Add the remaining ingredients and process until smooth.

An Indian Night

Last night we were looking to make something easy and quick. We got lucky and found an amazing recipe in one of Natalie Lussier's great recipe collections. It was fresh, nutritious and had a hint of Indian flavor. Ûber-delicious.

Collard Greens Pate Wrap

1 C. walnuts
1 C. chopped carrots
1 C. chopped celery
4 sun-dried tomatoes
Handful raisin
Pinch of sea salt, cumin and curry
A couple drops of olive oil

All mixed in a food processor. Spread on collard greens, and wrap them up. The result? Deliciousness.

Breakfast of Champions

Growing up I was taught: breakfast is the most important meal of the day. Words of wisdom I have taken to heart. My favorite breakfast is oatmeal. All kinds of oatmeal. Both tastes good and keeps me full. Only one problem: I've never had it raw. Luckily I have found a raw replacement.

Raw Oatmeal
1 Banana
1 Apple
handful of raisin
3 spoonfuls of almond crush (good way to use leftovers from almond milk-making)
a couple of spoons of almond milk

Blend all ingredient in a food processor. Top with ginger and cinnamon.

The Raw Sleep

We are currently six days into eating about 90 % raw food and I can already feel a difference. The first four days I had a constant pressure in my head (as if a headache was one the way). Luckily that side effect (?) is gone and my head is clear as can be.

The past couple of nights I have slept a hundred times better than I did a week ago. I actually sleep all the way through the night until my alarm goes off in the morning, something I haven't done since I jetlagged slept for 14 hours in the beginning of summer. This does not only give me long intense dream sequences, but I am rested when I wake up in the morning and have more energy during the day.

Despite doing dishes all the time, it is a positive experience so far.

The First Day Favorite

We just happen to be so lucky that the day we popped our raw food cherry, Karie's Lasagna was on the menu. This recipe is one (yes we have already found a couple) of our favorite recipes. We could not have asked for a better taste sensation to start us off. This lasagna is delicious!
Unfortunately pine nuts are ridiculously expensive, and we could not find macadamia nuts anywhere (although we now know Homeland carries them)... so this is how we made it:

Noodles
Bunches (yes, bunches) of fresh spinach leaves

Marinara Sauce
1/2 jar of sun-dried tomatoes
2 fresh tomatoes
basil, to taste
oregano, to taste
salt, to taste
2 tsp olive oil
2-3 dates
4 mushrooms

Blend all the ingredients in a blender (or food processor).

Cheese
1 C. soaked almonds
1 C. sunflower seeds
2 big cloves of garlic

Blend all the ingredients in a blender.

Layer the spinach leaves, the marinara sauce and the cheese.

Unfortunately we got a little carried away with our layering and did not have enough cheese for the top. But it was still delish!

A New Beginning

Welcome to my raw blog. This is where I will be sharing my experiences of eating raw (living) foods. My lovely fiancee Buck talked me into trying it out for a month. I'm all for it. Am looking forward to an interesting experience and am excited to see what eating majority raw food will do to my body.

I don't know how many times I have been complaining about the food here in the United States. Going through the regular grocery stores it seems close to impossible to find food without an entire pharmacy on the ingredient list. I am scared to even think about how all the processes food manipulates with the body. It scares me (hence the excitement of raw food).

I am happy we have started this. I never even thought about the fact that you can make (delicious) food without cooking. With this experiment I hope to learn more about foods and my body. Stay tuned for updates on everything from my personal experience, fantastic recipes and links to websites and blogs I find very helpful.
