Fantastic Chili

The past week we have made a couple of fabulous recipes. This chili was our first 5-star recipe. There will be no picture to this recipe, because I do not think chili, in any form, looks all that appetizing. But believe me, this one tasted just like any other good chili out there. And with a dollop of the dreamy sour cream, it was faaaantastic.

Unbelievable Chili

1 1/2 C. sundried tomatoes
3 C. chopped avocados
1 1/2 C. raw almonds
2 ripe tomatoes
1/2 C. chopped carrots
1/2 C. fresh parsley
1/2 C. freshly squeezed lemon juice
1 tbs chili powder
1/2 jalapeno
1 tbs cumin
1 tsp Himalayan salt
a dash of black pepper

Soak sundried tomatoes for 15 minutes. Put tomatoes (with water) in food processor. Add the rest of the ingredients. Pulse until ingredients are chopped and mixed. Texture should be chili-texture: thick and chunky!

Serve with Dreamy Sour Cream

Dreamy Sour Cream
1 C. soaked raw sunflower seeds
3/4 C. plus 1 tbs water
1/2 C. peeled zucchini
1/4 sweet onion
1/4 C celery
1/2 lemon
2 small garlic cloves
a dash of Himalayan salt

Process sunflower seeds and water until creamy. Add the remaining ingredients and process until smooth.
