An Indian Night

Last night we were looking to make something easy and quick. We got lucky and found an amazing recipe in one of Natalie Lussier's great recipe collections. It was fresh, nutritious and had a hint of Indian flavor. Ûber-delicious.

Collard Greens Pate Wrap

1 C. walnuts
1 C. chopped carrots
1 C. chopped celery
4 sun-dried tomatoes
Handful raisin
Pinch of sea salt, cumin and curry
A couple drops of olive oil

All mixed in a food processor. Spread on collard greens, and wrap them up. The result? Deliciousness.
