We just happen to be so lucky that the day we popped our raw food cherry, Karie's Lasagna was on the menu. This recipe is one (yes we have already found a couple) of our favorite recipes. We could not have asked for a better taste sensation to start us off. This lasagna is delicious!
Unfortunately pine nuts are ridiculously expensive, and we could not find macadamia nuts anywhere (although we now know Homeland carries them)... so this is how we made it:
Bunches (yes, bunches) of fresh spinach leaves
1/2 jar of sun-dried tomatoes
2 fresh tomatoes
basil, to taste
oregano, to taste
salt, to taste
2 tsp olive oil
Blend all the ingredients in a blender (or food processor).
1 C. soaked almonds
1 C. sunflower seeds
2 big cloves of garlic
Blend all the ingredients in a blender.
Layer the spinach leaves, the marinara sauce and the cheese.
Unfortunately we got a little carried away with our layering and did not have enough cheese for the top. But it was still delish!
