Unfortunately pine nuts are ridiculously expensive, and we could not find macadamia nuts anywhere (although we now know Homeland carries them)... so this is how we made it:
Noodles
Bunches (yes, bunches) of fresh spinach leaves
Marinara Sauce
1/2 jar of sun-dried tomatoes
2 fresh tomatoes
basil, to taste
oregano, to taste
salt, to taste
2 tsp olive oil
2-3 dates
4 mushrooms
Blend all the ingredients in a blender (or food processor).
Cheese
1 C. soaked almonds
1 C. sunflower seeds
2 big cloves of garlic
Blend all the ingredients in a blender.
Layer the spinach leaves, the marinara sauce and the cheese.
